Veggie Egg White Bites

I’ve read so many memes and facebook posts in the last few months about how annoying food bloggers are with their long-winded recipe descriptions. I get it. Get to the point. I couldn’t agree more. Here’s a short and sweet description of one of my favorite on-the-go breakfasts lately.

Do you ever swing through Starbucks and grab egg bites for a quick breakfast or snack? This ‘knock-off’ recipe is an affordable, easy way to have a quick, protein-packed breakfast on the go. Eggs, egg-whites and low-fat cottage cheese are whipped until smooth and creamy. Combined with crunchy bell peppers and a little spinach, these colorful, tasty bites are satisfying and so easy to prep for the week ahead.

I love to grab a couple of these on my way out of the house for an easy breakfast that actually keeps me full all morning long. Often times, I’ll use whatever leftover veggies I might have from a previous dinner, but my all-time favorite combo is red bell pepper and baby spinach.

Veggie Egg White Bites

  • 6 eggs

  • 1 cup egg whites

  • 1 cup 2% cottage cheese

  • 1 medium red bell pepper diced

  • 1 cup fresh baby spinach diced

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 1/4 cup grated parmesan cheese

Preheat oven to 350 degrees. Spray a 12-cup muffin pan liberally with cooking spray. In a blender, combine the eggs, egg whites and cottage cheese. Blend until smooth.

Pour egg mixture into a bowl and mix in finely diced red bell pepper and fresh spinach. Sprinkle eggs with kosher salt and black pepper. Carefully pour egg mixture evenly into muffin pan, using a spoon as necessary to evenly distribute the veggies. Sprinkle the top of each egg bite with parmesan cheese and an extra pinch of black pepper.

Bake in the oven for 18-20 minutes until egg bites are firm and a toothpick inserted into the center comes out clean. Remove from oven and allow to cool for 5 minutes before removing from the pan. Allow egg bites to cool completely and store in an air-tight container in the refrigerator.

For a quick on the go breakfast, put two egg bites in a microwave-safe bowl and microwave for 40 seconds. Top with sriracha or a slice of avocado for extra flavor.

*If spinach isn’t your thing, you could add 1 cup of diced ham, bacon crumbles or turkey sausage. Minced green onions or leftover roasted broccoli and sharp shredded cheddar cheese would all be lovely swaps or additions.
